In 1989, after several years of globe trotting, Lynda Flynn settled in the seaside community of Chester, Nova Scotia with her new husband, Stephen. The born-and-bred Kiwi brought along her chef's papers from the Auckland Technical Institute. As well as the dream of her own café. She imagined a welcoming, cheery home to good food and beverages. People say Sandy's a good salesperson," but she credits the Kiwi. "This place, the food, it sells itself." She gets a kick out of preparing custom coffees from freshly ground, fair trade organic Javablend beans. "How about an Americano on the Rack? Or a Flat White Skinny Extra Hot? I can make skim milk seem like cream - it feels so decadent. When you sprinkle the sugar, it should just sit there on top, then you've done it right." Soup's on with Mary MacDonald
Mary, a life-long devotee of feeding family, friends and customers typically arrives early to turn out two or three pots of wonderful, nourishing home-made soups. Then it's time for breakfast, some baking, and before she knows it, the lunch crowd arrives. "It doesn't stop," she smiles. Kiwi soups, frozen in 500 or 1,000 ml containers, are a popular "take-away" choice. "The nice thing about soup," says Lynda, "it's a comfort food, it's so soothing." Paul Elford comes to the Kiwi with years of experience in the kitchen as well as carpentry and boat building shops. Now he's trading it all in for a full plate of another kind - the Canadian military - officer training camp, a four-year Engineering degree followed by five years of serving his country. Vacation for Deborah she's back in the kitchen!
People are surprised to hear Deborah Corkum of Chester Basin has a summer job with the Kiwi's "Great team." After all, she gets summers off. Come September, she'll be back at her regular job in the Forest Heights Cafeteria. "I love it with the students," she says, smiling. |
